After the war Daniel Dudley Avery bought out the last of the non-family landowners so that the island came completely under the family's control.

Edmund McIlhenny was the husband of Mary Eliza Avery. Before the war he was a banker but, that industry was destroyed by the war so he moved to the island where he developed the pepper sauce that became the Tabasco Sauce empire.

Salt mining continues on an industrial scale a is run by the Cargill Corporation.

Ironically this illustrates Minnie's greatest lament. People constantly wanted to hold or pet them. In her memoirs she wrote; "It seemed impossible, to make people understand at first that I was not a child..."

Paul Carr Polk McIlhenny, Edmund's great grandson began working for the McIlhenny Company 1967. He served as president from 1998 to 2012. He expanded the business by championing the idea of selling Tabasco-branded items, such as T-shirts, watches, aprons, golf balls, salt shakers, and neckties. This puts Tabasco all over pop-culture. All you have to do is spot it.

Loyalist took whatever rout was available to them. Those leaving from areas like Massachusetts or Connecticut traveled by sea. For the Burlieghs, the Roses and others from northern New York had to take an overland route through Native American territory to Lake Ontario.

Not only were they at risk from the Patriots that patrolled the area but, the Oneida native tribe posed a risk as they were allied with the Patriots. They had to travel light so the cold and hunger were problems as well. Once clear of enemy territory, refugees crossed Lake Ontario at Oswego or followed the southern shore of the lake to the Niagara River. If they were lucky the trip might take 13 days. For many it took much longer.
